During the long trail drives, the chuckwagon was the headquarters of every cattle outfitting the range. In the 1879’s, dozens of cattle drives were moving millions of cattle from Texas markets to the Midwest. As a result, there was a shortage of cowboys and tremendous competition in recruiting them. The great trail drives up the Chisholm Trail began in 1867. The chuckwagon meant HOT, regular meals, and that lured many a cowboy to sign on to work the herds. Charles Goodnight’s theory worked, “The way to a cowman’s stomach was through the toils of his trade and the sweat of his brow!”
